February 25th

Like an 80's School Cafeteria

Remember the awesome school lunches as a kid?  The rectangle pizza, the neon yellow gravy, the little cartons of chocolate milk.  I loved getting the menu for the month and anticipating what was being made for us in the cafeteria.  The best was on holidays like Halloween when there would be "special" foods like witches brew or broomsticks.

Kids nowadays probably have to eat things like organic tofu scrambles and gluten free quinoa bakes instead.  How sad that my daughter might never get to look forward to that amazing rectangle pizza.

This seems like something that would be served in a cafeteria.  Or in a country diner.  When I served it I thought, "This looks like a real 80's Midwestern meal."  And it was perfect because we watched the movie Heathers while eating it.  Just like being transported back in time.

Grades:

Megan - A- (I thought the gravy had good flavor and pretty much anything fried and soaked in gravy tasted good.  No wonder why my diet isn't working.)

Noelle - A (Noelle ate a lot of it without much to say.  She mostly just wanted to make sure I knew that she didn't want to eat it with a fork, but instead wanted to "pick it up and take bites" because chicken fried steak is always better when you eat it with your fingers.)

February 24th

Friday Fish Fry

I've always said that the only way I like to eat fish is if it's fried.  I was a little nervous about Catfish since it gets a bad rep for flavor.  However, this recipe is from my sister's friend who is from Louisiana.  I figured if anyone knows how to make Catfish, it would be her.

Check out this blog...I've made a few of her recipes and they all have turned out delish.  She also had great stories and beautiful pictures!
This Catfish turned out crispy and delicious.  I liked the fresh taste the lettuce cups added to balance the fried fish.  I think I used too many shallots in the sauce, but it was still really good.

Grades:

Megan - A (The fish had a really nice crisp coating and the sauce added a great fresh flavor.)

Doug - B+

Noelle -A (Noelle was shoveling this into her mouth as fast as I could say "catfish."  She seemed to enjoy the "dip" [aka: Gribiche Sauce] at first, however after a few tries she was gagging on it.  She still accepted a second serving of fish though.)

February 23rd

Cans Can Do It

This recipe came from a blog where she was making a dinner using all canned goods.  Pretty easy...open up the cans and make a delicious soup.

Slow Cooker Chicken Enchilada Soup

I made a few changes to this recipe.  While I used a few canned goods, I also used some fresh ingredients.  I used frozen corn instead of canned.  I also did not used canned chicken broth and I used fresh garlic, avocado, cilantro, and cheese.  It would be really good with tortilla chips on it, but I was trying to stay healthy. Finally, I don't have a slow cooker, so I made it on the stove top.

Grades:

Megan - A (This soup had a really great flavor and was really simple to make.  I think it would also be good with beef or just leaving out the meat all together and making it vegetarian.)

Doug - A-

Noelle - C- (Noelle started out eating a little of everything in this soup, but after a few bites only wanted the broth again.  I think it might have been a little spicy for her.)

February 22nd

The Other White Meat

Growing up I remember seeing a lot of commercials for pork.  I guess more people must be eating pork now since they don't seem to need the commercials anymore.

I made this with a pork tenderloin instead of a pork roast and it turned out pretty good.  Another good one from America's Test Kitchen!

Megan - B- (This got a low grade because I'm not the biggest pork person and because I was really hungry for a less-healthy dinner.  Otherwise, it was pretty good.)

February 21st

Meeting Night

We had a condo association meeting tonight, so there wasn't really any time to cook.  Sometimes when there's no time to cook, the best food is eaten :)

Megan - A- (The only thing that would've made this better was if I used American cheese rather than cheddar.  There's something about that processed, melty cheese that just makes a grilled cheese sandwich great.)

Noelle - Noelle didn't have any grilled cheese today, even though I'm sure she wishes she did.

February 20th

Stoup

According to Rachel Ray a stoup is a combination of a soup and a stew.  To me this seemed more like a soup.

This was a hearty tomato soup that turned out better than I expected.

February 19th

Being a Boss

To be a boss you can't make your own dinner.  Someone else has to make it for you.  So, we ate out...again.

We were out visiting Doug's grandparents and I didn't feel like cooking, so we stopped at Boss Burrito on the way home.  This is our favorite Mexican place in Oak Park.  It's pretty authentic Mexican food and really tasty.  Their hot sauces are delicious too.

Grades:

Megan - A (I had a steak burrito.  It was big, filled with good tasting ingredients, and tasted great with hot sauce squirted on it.  I would definitely  recommend this place for carry-out or dining in.)

Doug - A (Doug had a chorizo taco and a steak taco.  He says the chorizo is so good!)

Noelle - A- (Noelle had a ground beef taco and rice and beans.  She loves refried beans so she ate a ton of those.  She seemed to like the rice too and ate quite a bit of taco.  She really wanted to try my burrito, so I let her.  She was disgusted by the lettuce in it and then was a little worried that her taco might have "salad" in it too.)

February 18th

Daniel Tiger Extravaganza

Today was Noelle's 2nd birthday party and we did a Daniel Tiger theme since she loves that show.  She had tons of fun and so did we!

Have Your Cake...

Since we had lots of snacks at her party, we weren't really hungry for dinner.  I just had some of her leftover birthday cake instead.

No dinner = no grades (but I guess I would give the cake an A)

February 17th

Thai Take-Out

I really think thai food is one of the best for ordering take out.  Some foods don't travel well when you pick them up or get them delivered, but thai food is almost as good for delivery as in the restaurant...almost.

This is our go-to thai delivery restaurant.  The food in the restaurant is exceptional and usually the delivery is really good too.  I was a little disappointed with mine this time though.

Grades:

Megan - B- (I had Pad Thai with fried tofu and a thai iced tea.  The Pad Thai seemed to be lacking sauce and was a little dry and flavorless.  Usually it's so good from there, so that was disappointing.  Also, I'm pretty sure they gave me thai iced coffee intead of the tea.   Still good, but not what I ordered.)

Doug - B+ (Doug had spicy basil and said his had "interesting noodles.")

Noelle - C (Noelle tried my Pad Thai.  She ate all the eggs out of it and the tofu, but she did not want the noodles.  I don't know why she hasn't been into noodles lately.  Maybe she's watching her carbs?)

February 16th

Take-Out at Home

I'm not going to lie...nothing is easier than picking up the phone and ordering take-out.  However, some take-out meals can be prepared at home really easily too (and for cheaper).  This is one of them.

This is a vegetarian meal and is really simple to make.  I wasn't sure how it would taste, but it turned out really good!  I haven't had much hot and sour soup to compare it to, but I think it was a good take-out imposter.

Megan - A- (I liked the flavor and the different textures of the vegetables.  I wish I would've added a little more hot sauce, but I was trying not to make it too spicy for Noelle.  She ended up not having it anyway.)

Doug - B

Noelle - D+ (Noelle was intrigued that there were eggs in it because she loves eggs, but she quickly realized that she couldn't taste the eggs anyway.  She hasn't been a fan of mushrooms lately, so she wasn't into those.  She was enjoying the tofu for a few bites and then decided she only wanted soup, aka-broth. )

February 15th

So Seductive

I previously featured chicken tetrazzini on my blog and referenced a funny clip (I think it was from Maury) where a lady is accusing someone of seducing her husband with chicken tetrazzini.  So in honor of Valentine's Day, I had to make this seductive dinner again.  Check out the video clip in the recipe link below...

I really like this dish...too bad it's so unhealthy.  Nothing beats a pasta casserole with a rich, creamy, cheesy, mushroom sauce.  You really should give up the diet for a day and try this!

February 14th

Nothing says Love like a Cheeseburger

Happy Valentine's Day!  And, Happy birthday to Noelle!  Doug came home early from work to have dinner with us for Noelle's birthday and Valentine's Day.  We went out, which is always the best present for me.

I thought about taking a picture, but the lighting was really dark in there, so it wouldn't have worked well.

This is one of our favorite restaurants that just opened up a new location down the street from us.  They have good burgers and really good varieties of macaroni and cheese.

I had the Scratch Burger and fries.  The burger has lettuce, onion, truffled arugula, and blue cheese on a pretzel bun.  I also had a cinnamon Old Fashioned to drink.

Grades:

Megan - A (My burger was delicious and huge.  Fries are always good. The drink was great - Doug said it was the best Old Fashioned he's ever tried!)

Doug - A- (Doug built his own burger and had fries.)

Noelle - A (Noelle had classic macaroni and cheese and some of our fries.  She liked it all.  She kept asking for more fries and more ketchup [they have a fancy homemade looking ketchup].)

February 13th

Too Full for Dinner

We had a funeral today and afterward had a big lunch.  The lunch was so big that we weren't really hungry for dinner.

Instead of dinner, I had a little snack.  We didn't have much to choose from, so I had some blue cheese and crackers.

Grades:

Megan - B (I like blue cheese and I love cheese and crackers, but it's more of a snack than a dinner.  I'd also have preferred a brie or a goat cheese.)

Doug - Doug was disgusted.  He hates blue cheese.

Noelle - Noelle had something else for dinner.

February 12th

A Busy Day and a Tough Night

We had a really busy day today.  We took Noelle to Daniel Tiger Live for her birthday.  Then after the show we met Doug's parent's so they could take Noelle to watch her for the night and we could go to a wake.  The wake was sad and we didn't get home until late, so there was definitely no cooking.

Eating this is a treat for me.  I think it's because these are similar toppings that I put on my frozen yogurt, so when I eat this I feel like I'm eating dessert. 
I use plain yogurt and then mix in sliced almonds, chocolate chips, and unsweetened coconut flakes.  Mmmm.....

Doug - Doug loves yogurt, but he didn't have this for dinner.  He had some leftovers instead.

Noelle - Noelle was at Grandpa and Nana's house and ate something much more delicious than yogurt!

February 11th

An Unhealthy Reward

Doug had a weightlifting meet tonight and we were supposed to go out for pizza after, but it ended up being too late for Noelle, so we went home and ordered pizza instead.  It was so unhealthy, but so delicious.  And, the perfect treat for Doug after all those heavy lifts!

Megan - A- (I love fast-food pizza.  I would've rather had this be pepperoni, but I already had pepperoni pizza for dinner this year, so we went with cheese.  The cheesy bread was really good, but I think I like the plain cheesy bread is better.)

Doug - A (Doug says he can't lie...it was good.)

Noelle - Noelle was already in bed by the time the pizza came and Doug and I enjoyed it too much, so there was none left for her to try.

February 10th

Pretending to be a Vegetarian

A lot goes into my meal planning for the week.  First of all, I have to make sure it isn't something I've already eaten this year.  Then, each week I try as best as I can to make only one chicken dish, one beef dish, one pork (or other meat/fish) dish, and one vegetarian dish.  I also try to make one soup every week in the fall/winter and then Doug makes a stew.  It sounds silly, but it's a lot of work figuring it out! 
The vegetarian dishes are always hard for me to think of.  It's hard to find something healthy, vegetarian, and filling enough to be a main dish.  This one does a pretty good job of meeting all those criteria.

I added a little hot sauce to this and it was pretty tasty.  I really didn't miss the meat!

February 9th

The Opposite of Pizza

I recently found out that today was "National Pizza Day."  I REALLY wish I had pizza for dinner tonight.  It sounds sooooo good.  This did not sound good to me tonight, but actually surprised me and tasted better than I expected. I still wish we had pizza though.

Doug said my title doesn't make any sense because how is this  the opposite of pizza?  To me it's perfectly clear...think of pizza.  Now think of something that is about as far away from pizza as you can get.  Yes! Beef tagine is nothing like pizza...the opposite of pizza.
I made a few mistakes with this recipe.  I forgot to coat the meat in the spices before starting to cook it in the pan (oops...guess I shouldn't talk on the phone while cooking dinner.) So I just added the spices into the pan with the cooking beef.  I don't know if it made much of a difference.  I also bought beef stew meat, which I think was a mistake.  Beef stew meat is great because it's inexpensive and when you cook it for a long time in a stew it becomes tender.  This doesn't cook for a long time though, so the beef was pretty tough.  The recipe doesn't say what to serve it with, so I served it over brown rice and I think that was a good choice.

Megan - B+ (I liked the flavors, but I wish the beef was more tender.)

Noelle -C (Noelle only liked the beef.  She ate all the beef, but after a few bites of squash, she said "no more squash."  Funny, because she normally likes squash and I thought that would be her favorite part.)

February 8th

More Prosciutto Please

I said this in another post, but I really love prosciutto.  It's kinda like bacon...adding it to anything makes it even better.

These are a inexpensive, and really easy to make, but they look really fancy.  I think they'd be perfect to impress some dinner guests.
The recipe calls for chicken thighs, but I used breasts.  Chicken thighs would be even more inexpensive and would proabably be more moist and juicy.
The recipe says to grill them.  Since it's winter here and freezing, I baked them in the oven instead.  375 degrees for 40 minutes and it worked great.  The rosemary gets really crunchy and the prosciutto gets nice and crisp.

Grades:

Megan - A (I LOVE that these are so easy and take basically no time to make but they look so beautiful, make my house smell so good when they are cooking, and taste delicious.

Doug - A-

Noelle - B- (Noelle ate a fair amount of this but didn't seem too impressed.  I think she was confused by the prosciutto and she didn't seem too happy about the rosemary contaminating every piece. I wish I had got the idea for the title of this blog from Noelle asking for more prosciutto, but nope...it was just from me asking for more.)

I Am Not A Chef

Chefs can make up dishes and cook delicious food without using a recipe.  Chefs don't have to measure ingredients, they can just tell how much they need.  And chefs always have beautiful plating.
I am not a chef.  I am a cook. A pretty good cook I think, but definitely not a chef.  I can't make up my own recipes.  I usually have to measure ingredients (although I am starting to "eyeball" more and more successfully lately).  And if you read this blog, you all know my plating is not very appetizing most of the time.
I think this is the ONLY dinner I have ever made where I did not follow a recipe.  I'm going off memory here.  I didn't make it up - my mom did.  But the recipe was never written down and I can make it without following any written directions!

Pork Nuggets

My mom made up this recipe and cooked these for my family when we were growing up and since there was never really a name for the dish, my sister and I called them pork nuggets.  Fits the bill...they look like nuggets.  But, they are way fancier, somewhat healthier, and much more delicious.
I forgot a key ingredient in this recipe (I guess that's a hazard of not having it written down.) It was the shallots, but it was still good.  Since there is no recipe I'll do my best to estimate one:

Ingredients:
  • 1 lb pork tenderloin but into slices (aka nuggets)
  • flour
  • salt
  • pepper
  • olive oil
  • 1/2 c white wine
  • 2 shallots (chopped)
  • 1/4-1/2 c chicken broth
  • blue cheese crumbles(optional)
Directions:
  1. Salt and pepper the pork nuggets.  Then dredge them in flour and shake off the excess flour. 
  2. Heat a couple tablespoons of olive oil in a skillet and cook the pork until cooked through. After the pork is cooked, remove it from the pan.
  3. Saute the shallots in the pan until soft.
  4. De-glaze the pan with the white wine, scraping up brown bits.  Add the chicken stock and whisk in a little more flour to help it thicken.  Cook the sauce a few minutes, stirring frequently until it is thickened like a gravy.
  5. Return the pork to the pan to heat it back up.  Serve the pork with the sauce over it and sprinkle with blue cheese crumbles.
Grades:

Megan - A (I love the flavor of the wine in the sauce mixed with the blue cheese.  It would've been even better with the shallots.)

Doug - B- (Doug said he would've given this a higher grade, but he lowered it because of the missing shallots.  He also does not like blue cheese so he had his with just the sauce.)

Noelle - A (Noelle ate this really quickly and ate a big serving of it.  I didn't give her any blue cheese thinking she wouldn't like it.  However, the next day when I was eating some blue cheese for a snack she kept asking me for some so I gave her a piece thinking she'd be disgusted.  To my surprise, she asked for more.  I guess I learned my lesson - don't assume she won't like something.)

February 5th

An American Classic

There are certain dishes that are extra-American, and this is one of them.

Best Beef Stew
recipe from: The Complete America's Test Kitchen TV Show Cookbook 2001-2013


It was Stew Sunday again and Doug's turn to make a delicious dinner.  His stews are usually pretty amazing, but this one fell a little flat.  There was nothing really bad about it.  I just thought it was a little bland.  Which was surprising because there were a lot of great flavors that went into it.
We did not have salt pork (and I really don't even know what that is), so we used bacon instead.  Who knows if that's a true substitute, but it seemed like a good idea.  Maybe if we had used the salt pork the stew would have had more flavor.


Ingredients:


2medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
4 anchovy fillets , finely minced (about 2 teaspoons)
1 tablespoon tomato paste
1 boneless beef chuck-eye roast (about 4 pounds), trimmed of excess fat, cut into 1 1/2-inch pieces (see note and step by step below)
2 tablespoons vegetable oil
1 large onion , halved and cut from pole to pole into 1/8-inch-thick slices (about 2 cups)
4 medium carrots , peeled and cut into 1-inch pieces (about 2 cups)
1/4 cup unbleached all-purpose flour
2 cups red wine (see note)
2 cups low-sodium chicken broth
2 bay leaves
4 sprigs fresh thyme
4 ounces salt pork , rinsed of excess salt (see note)
1 pound Yukon gold potatoes , scrubbed and cut into 1-inch pieces
11/2 cups frozen pearl onions , thawed
2 teaspoons unflavored powdered gelatin (about 1 packet)
1/2 cup water
1 cup frozen peas , thawed

Table salt and ground black pepper


Directions:
1. Adjust oven rack to lower-middle position and heat oven to 300 degrees. combine garlic and anchovies in small bowl; press with back of fork to form paste. Stir in tomato paste and set mixture aside.
2. Pat meat dry with paper towels. Do not season. Heat 1 tablespoon vegetable oil in large heavy-bottomed Dutch oven over high heat until just starting to smoke. Add half of beef and cook until well browned on all sides, about 8 minutes total, reducing heat if oil begins to smoke or fond begins to burn. Transfer beef to large plate. Repeat with remaining beef and 1 tablespoon vegetable oil, leaving second batch of meat in pot after browning.
3. Reduce heat to medium and return first batch of beef to pot. Add onion and carrots to Dutch oven and stir to combine with beef. Cook, scraping bottom of pan to loosen any browned bits, until onion is softened, 1 to 2 minutes. Add garlic mixture and cook, stirring constantly, until fragrant, about 30 seconds. Add flour and cook, stirring constantly, until no dry flour remains, about 30 seconds.
4. Slowly add wine, scraping bottom of pan to loosen any browned bits. Increase heat to high and allow wine to simmer until thickened and slightly reduced, about 2 minutes. Stir in broth, bay leaves, thyme, and salt pork. Bring to simmer, cover, transfer to oven, and cook for 11/2 hours.
5. Remove pot from oven; remove and discard bay leaves and salt pork. Stir in potatoes, cover, return to oven, and cook until potatoes are almost tender, about 45 minutes.
6. Using large spoon, skim any excess fat from surface of stew. Stir in pearl onions; cook over medium heat until potatoes and onions are cooked through and meat offers little resistance when poked with fork (meat should not be falling apart), about 15 minutes. Meanwhile, sprinkle gelatin over water in small bowl and allow to soften for 5 minutes.
7. Increase heat to high, stir in softened gelatin mixture and peas; simmer until gelatin is fully dissolved and stew is thickened, about 3 minutes. Season with salt and pepper to taste; serve.

Grades:

Megan - C (I thought it was bland and sub-par for a Doug stew. I also decided that I don't really like pearl onions.)

Doug - B+ (Doug liked the thickness of it, but was disappointed in the flavor.)

Noelle - D (Noelle was so excited when she heard she was going to be eating "Daddy's stew."  She seemed to enjoy the first few bites and was really happy there were potatoes in it.  She was searching through the stew for potatoes to eat and thought she found one.  She put it in her mouth, but to her surprise it was a pearl onion.  She was not pleased with that.  After I told her there were no more potatoes in it because she had eaten them all she wanted nothing more to do with the stew.)

February 6th

Baby Food Anyone?

This was a pureed soup and whenever I eat pureed soups they kind of remind me of baby food.  Sorry...that doesn't make it seem appetizing, but it's what I think of when I'm looking at it.

Bacon-Sweet Potato Soup

The website I got this from calls it a Fall soup, and I'd have to agree.  It felt pretty fall-ish.  However, I still enjoyed it in the winter.
I already told you I thought this soup looked like baby food and it does.  But, it doesn't taste like baby food (unless it tastes like really good, fancy baby food...I'm not a baby food connoisseur.)
I started out not really sure if I liked the flavor of this because I found it very weird that it had lime juice in it.  However, after a few bites, I got used to the flavor and then ended up really, really liking it.  I think the lime juice added a sweet, tart dimension and without it the flavor might have been a little flat.

Grades:

Megan - B+ (I'd make it again.  It's really healthy [except for the bacon...which I'd add more of], filling, and quite tasty.  I think next time I'll eat it in Fall.)

Doug - B+

Noelle - A (Noelle was shoveling this into her mouth.  She loves sweet potatoes and apparently loves bacon because she was really happy to find little bacon surprises in it.)

February 4th

Quick, Delicious, and Incredibly Unhealthy

Sometimes you need a quick ready-to-eat meal.  If you're willing to have an unhealthy night, I highly recommend this dinner.  Especially in the winter when it's freezing outside and you need something hearty to warm you up.

Like I said...these are not for those of you on a diet.  But, they sure are good!  I didn't know it was possible to pack so many calories, fat, and carbs into a single little pie.  In my opinion all those calories are totally worth it for this special treat.  You still ahve a while before swimsuit season anyway. 
They come frozen and all you have to do is pop them in the oven.

February 3rd

A Real Dinner

I went grocery shopping and got out of vacation-mode to cook a real dinner!  I have to say it felt good cooking again.  I'm sure tomorrow it will go back to just being a chore, but for tonight, I'll enjoy it!

Salisbury Steak Meatballs

I almost never make meatballs, but I have already made two types this year.  I guess meatballs usually sound like a good hearty winter dinner to me...especially ones like these with a mushroom gravy.  This was another dinner that felt very Midwestern to me. 
It was really simple to make and on the website, she gives directions for cooking it three different ways; on the stove top (which I did), in an instant pot, or in a slow cooker.  The only change I made was instead of using half ground beef and half turkey, I used all 96% lean ground beef.  It turned out fine with just the ground beef and since I used the super-lean stuff I don't think I was adding that much more fat.

Grades:

Megan - B (I liked them but thought they were a little bland.  I would make them again, but add a little more seasoning.  I'd  add more salt and pepper, and then maybe some garlic, and perhaps a little wine to the sauce.)

Doug - B+

Noelle - B+ (Noelle started out eating these so fast she was literally out of breath and I thought for sure they were going to get an A+.  But then she got a big piece of mushroom.  Usually she likes mushrooms, but I guess not today.  She actually made herself cough and the mushroom shot out of her mouth.  Ew.  Then she said, "no more mushrooms" and continued eating just the meatballs.)

February 2nd

No Groceries

I guess I'm still in vacation withdrawl...and I still have not gone grocery shopping.  In a desperate attempt to not make dinner, I scrounged up some food to eat.

Buttered Noodles with Salt


This is a dinner I would've eaten in college.  Or maybe as a kid.  But, as an adult, I still love buttered, salted egg noodles.  Even though I just made it so I didn't really have to cook dinner, I really enjoyed eating it.

Grades:

Megan - A (Buttered noodles are the best.  Sometimes you just want something simple and unhealthy and this was perfect.  The key is to use lots of salt.  Lots and lots of salt.)

Doug - Doug made fun of me for eating this for dinner and would never have even considered eating this :)  He had a fancy frozen salmon dish from Trader Joe's instead.

Noelle - Noelle didn't have any and again ate something much healthier, but I'm sure she would've loved it.

February 1st

Paradise Withdrawl

I was still getting out of vacation mode and didn't want to cook (and I hadn't gone to the grocery store yet), so we had a frozen pizza for dinner.

Signature Selects Pepperoni Pizza


This is Jewel's pizza brand and I think it's one of the best frozen pizzas.  Not only is it less expensive than other brands, but it's really good!  I've only had the pepperoni flavor, but I guess I'll probably be trying new flavors soon since I can't have this one again for the rest of the year!

Grades:

Megan - A (For frozen pizza, I really think this store-brand one is the best it gets!)

Doug - B+ (Doug burned his mouth.)

Noelle - Noelle didn't get any of this.  We ate it all and she had something much healthier.

January 31st

Ummm....

We got back from vacation this evening.  I ate a late lunch and snacked on the plane.  Plus, I definitely didn't feel like cooking right when we got home.  So I opted to have Veggie Straws for dinner.  Don't judge me...they're delicious.


Grades:

Megan - A (They're tasty and require no cooking :)

Doug - Doug scoffed at my decision to eat this.  He's far too healthy to ever do such a thing.

Noelle - A+ (Noelle did not have these for dinner, but she did eat a lot of them on the plane and was obsessed.  As a matter of fact she had been talking about eating them for days before the trip as soon as she saw me buy them.  She refuses to call them veggie straws though and will only call them fries.)

January 30th

Dining with the Fish

There were lots of huge Koi fish in the hotel lobby and Noelle really liked seeing them.  She was excited this night because we got to eat by the fish.

This restaurant was located on the "Zen terrace" in the hotel.  It was surounded by lush, tropical plants, colorful lights, koi fish, a fountain, and live music.  Another great atmosphere. It is a Japanese fusion restaurant.

Here's what we had:

Megan: appetizer: tuna tartare
             entree: soft shell crab roll, and a Philadelphia roll
Doug: Appetizer: scallop, salmon, and tuna ceviche
          entree: spicy tuna roll, puebla roll, and a seabass roll
Noelle: Appetizer: ceviche
            entree: Butterfish fillet

Grades:

Megan - A (I love sushi so this restaurant was right up my alley.  The fish tasted fresh and all the plates were beautifully presented.)

Doug - B+ (Doug says the ceviche was good.)

Noelle - A- (Noelle surprisingly loved the ceviche.  She seemed to think the Butterfish was ok.  She tried some of my sushi and also thought that was just ok.  She loved the tempura fried banana we had for dessert.  And she had a lot of fun trying to eat with chopsticks.)

January 29th

Bad Weather?

We were complaining about the weather this day since it was cloudy, windy, and only about 70.  Still about 40-50 degrees warmer than home.  Guess we shouldn't have been complaining.

The hotel uses this description of Mole Restaurant: "You have never had Mexican food like this. Now you can experience the authentic, rich flavors and various layers of Mexican contemporary cuisine. The food is the star at this restaurant starting with special made-to-order quesadillas. The traditional meets the modern in décor as well with gorgeous Mexican tiles lining the wall. The best table in the house goes to the corner overlooking the Caribbean. This might make for the best Mexican meal of your life."  I would agree with that description.

This was my favorite restaurant at the resort.  The food and atmosphere was upscale and amazing.  They also had a special guava margarita that was soooo good.  After dinner a mariachi band came and serenaded us at the table.

Here's what we had:
Megan - appetizer: blue corn mini sopes with shrimp
              entree: Roasted Garlicy Octopus
Doug - appetizer: cactus tostada
            entree: Duck confit
Noelle - Chicken nuggets and fries

Grades:

Megan - A+ (The corn sopes were like little fried corn patties with a delicious shrimp topping.  I never had octopus before and was nervous to try it, but I am so glad I did!  I am now an octopus lover!  It was roasted and crispy with garlicy breadcrumbs.  It was served over mashed sweet potatoes and sage.  I wish I could eat it again right now.)

Doug - A- (Doug says, "The duck confit was really excellent and the whole family enjoyed the Mariachi band.")

Noelle - A (Noelle was being so good about trying new foods and eating off the regular menu, we decided to treat her with a kids menu item.  She ate a ridiculous amount of fries and a couple chicken nuggets.  She also ate a lot of bread.  She loved it all.)

January 28th

Paradise Found

I know I keep saying it was "paradise", but it really was.  Just go and you'll see.

Another night dining outside by the beach.  This was a traditional Brazilian Steakhouse.  They give you discs with a green side and a red side.  When you want them to bring you more food you flip it to green. When you want the food to stop coming, you flip it to red.  They specialize in grilled meats which they carve off a skewer for you at the table.  They also brought out side dishes of salad, grilled peppers, mushrooms, rice and beans, and mashed potatoes.  I can't remember all the meats we had because there were a lot.  They were all delish!

Grades:

Megan - A (The meats were tender, seasoned well, and well-cooked.  The sides were very tasty, and there was a lot of food.)

Doug - A- (Doug says "try the sausage.")

Noelle - A (Noelle ate a lot of meat.  I think her favorite was the Brazilian sausage.  She also liked the mashed potatoes and loved the rice and beans.)

January 27th

Welcome to Paradise

We went on vacation to Cancun, Mexico and entered paradise.  We stayed at the Paradisus Cancun Resort and it was amazing.  I didn't have to cook, the food was really well prepared and tasty (which was surprising to me since it was an all-inclusive resort), the sun was shining, it was warm, and I was with my two favorite people.  If you ever are in Cancun, I'd highly recommend this resort.

Sorry - there are no pictures...I was on vacation!

Imagine sitting in an ocean-side restaurant, sipping a margarita, and watching the waves rolling in.  Yep, that's the atmosphere at Enso.
The hotel's website describes Enso as, "Where the senses are left exposed to oriental textures and flavours. The union of four cultures share the table: Indian, Chinese, Korean and Thai."

We shared cashew pork lettuce wraps for our appatizer.  They came with a yummy dipping sauce.

We all ordered different entrees:
Megan - tandoori chicken
Doug - green curry chicken
Noelle - beef teriyaki wok

Grades:

Megan - A (my chicken was really really tender.  It had a great grilled flavor and a silky, spiced sauce.  It was served with jasmine rice and garlic naan.  I really enjoyed it.)

Doug - C+ (Doug thought his curry had too much broccoli and cauliflower in it [neither of which he likes at all].  He said it also didn't have a great flavor.)

Noelle - B+ (Noelle liked hers but was distracted by begging for my naan bread.  After my bread was gone, she seemed to like hers.  She ate quite a bit of it, but she didn't seem obsessed with it.)

January 26th

If it feels like Russia...

It's winter and it's cold.  I've never been to Russia, but I'd imagine the frozen tundra feels a bit like a Chicago winter.  Okay, I suppose it's worse than that, but Chicago's winters are still pretty bad.  I don't know if they truly eat stroganoff in Russia, but to me it feels very Russian.

This is one of my favorite childhood recipes.  My sauce turned out a little runny.  I'm not sure what the solution to that is.  Maybe add flour? maybe reduce it longer? Maybe add less wine/broth?  Even with a thin sauce, it still tasted good.

Megan - A- (It would've been a solid A, but the runny sauce brought it down a bit.)
