June 1st - 6th

Nothing but Mush

My wisdom teeth were successfully extracted and while in recovery mode, I couldn't eat anything except soft mushy foods.  I figured it would be pretty boring to make a post about each individual mush, so I'll just list them out here.  You can check and make sure I still haven't eaten anything for dinner more than once this year :)

A Menu of Mushiness
June 1st - applesauce
June 2nd - vanilla yogurt
June 3rd - garlic mashed potatoes
June 4th - Stouffer's Macaroni and Cheese
June 5th - loaded mashed potatoes
June 6th - hummus and pitas

Grades:

Megan - F (While each of these are delicious on their own, none make a very good dinner.  I'm starving and want normal food.)

Noelle - Noelle would probably love to have most of these for dinner, but she's been having real dinners since she still has all her teeth.

A Last Supper

I have to get my wisdom teeth removed tomorrow, so this is the last regular meal I'll be eating for a little while.  This would not be my choice for a last meal, but it was what I had the groceries for.

Chicken with Creamy Garlic Sauce
recipe from: http://bakeatmidnite.com/chicken-with-creamy-garlic-sauce/

Would this be my choice for a last supper? No.
Was it good? Yes.
Was it easy? Yes.
Would I make it again? Yes

Grades:

Megan - B (I liked the crispiness of the crust on the chicken and the sauce was really nice and creamy and garlicy.  Pretty good for a weeknight meal.)

Noelle - A- (I wasn't with Noelle when she ate this as it was after I had my teeth pulled and I was recovering.  However, I was told that she liked it and ate it without any real hesitation or interesting remarks.)

Burrito...Burrito...Casserole!

I may have already eaten a beef burrito for dinner this year, but I have not eaten a burrito casserole!

Easy Baked Burrito Casserole
recipe from: http://writtenreality.com/baked-burrito-casserole-recipe/

In the pictures on the blog the casserole looks layered, and tall, and delicious.  Mine looks smooshed, flat, and unappetizing, but don't be fooled - it was quite yummy!
I was a little worried because it has cream of mushroom soup in it, which seems pretty weird for a burrito (but I guess to be a true casserole it has to have that :) However, have no fear, because it pretty much tasted just like a burrito.  It was great with some hot sauce on it for added flavor.

Grades:

Megan - A (Perfect for when your in the mood for burritos but want something for the whole family instead of making individual burritos.)

Noelle - F (Noelle continued her strike on casseroles by hating this.  It's full of things she loves independently, but she just hates casseroles.  Too much food mixed together for a two year old I guess.)

Grilling Like an American

Today was the first time this season we used the grill!  Summer's comin'!  I feel like on Memorial Day you have to grill.  So I did - like a good American.

Vegetable Steak Kabobs
recipe from: http://www.tasteofhome.com/recipes/vegetable-steak-kabobs

These were so easy it's crazy.  I was expecting the beef to be tough since it was such a cheap cut, but it was really tender.  And the marinade was really delicious - I will definitely be using that marinade recipe again and will be making these again.

Grades:

Megan - A (So tender and flavorful.  The veggies tasted amazing from the grill and marinade as well!)

Noelle - C- (Noelle was not too into this and I'm not sure why.  Maybe because of the marinade flavor?  Maybe because she was SUPER tired when I served it to her?  She started out by trying a mushroom and decided she didn't like it and moved on to steak.  She liked the steak, but said it was chewy.  While she was eating her steak I asked her if she wanted any more mushrooms and she said no.  So, I ate her mushrooms.  When I ate the last one she started crying saying she wanted a mushroom.  Huh?  I thought you didn't like them???  I was able to distract her with some tomatoes.  She really liked the tomatoes and said she didn't want any more steak.  I tried to get her to eat more by eating a small piece myself.  She immediately started crying saying, "I want that steak!  Give me that steak!"  I explained to her that I was chewing it and couldn't give it to her, but she had about 15 other pieces exactly like it on her plate.  But, she really just wanted the one I was chewing and kept saying, "Please mommy.   Give it to me.  I NEED that steak!" while hysterically crying.  Pretty much being the poster child of over-tiredness.  When her tantrum finally calmed down she was through with eating and I was through listening to her craziness.  Dinner over.)
